STARTERS

GOAT CHEESE SQUASH SALAD
Panko crusted local Woolwich Dairy goat cheese, served on Artisan greens with roasted heirloom acorn squash and Rolling Ridge maple balsamic vinaigrette.
CHARCUTERIERE DU MAISON
Duck liver pate, house cured duck pastrami, and scotch quail egg tourtiere, served with accompaniments.
WINTER VEGETABLE CHOWDER
A medley of local winter vegetables, simmered in duck stock and cream with fresh tarragon. Garnished with puff pastry.
ENTREES

SUGAR SHACK PORK
8 oz Metzgers Farms smoked pork loin chop,
marinated with local Rolling Ridge maple syrup,
olive oil and fresh mint. Grilled and served on Polenta with a daikon, apple relish.
DUCK CONFIT "JAMBALAYA"
Slowly cooked Muscovy duck leg, served on organic red quinoa and jasmine with local Metzger's famous chorizo sausage. Finished with savory creole sauce.
ROAST CHICKEN
Fresh Ontario breast of chicken rubbed with basil, walnut pesto, roasted and served on roasted winter vegetables with sherry infused pan juices.
BRAISED BEEF STUFFED PASTA
Fresh Ontario Black Angus corn fed beef cheeks, slowly braised in espresso, chipotle and veal stock, then baked in pasta shells with wild mushrooms. Finished with vodka smoked tomato concasse and asiago cheese.
TROUT A LA NAGE
Locally farmed Rainbow trout, steamed with fresh herbs. Finished in a saffron broth with PEI mussels, mini red potatoes and julienne vegetables. Served with Strano Bakery grilled focaccia and guacamole aioli.
DESSERT
BANANA NUT BREAD PUDDING
Served warm with butterscotch sauce and
rum scented whipped cream.
STICKY TOFFEE TRIFLE
Layered with dark sweet cherries, vanilla custard
and chocolate.
